Pecan Grits Porridge Bread

        I wanted to get a nice nutty flavor for this one without using whole nuts so I used ground pecans in the porridge.  I also wanted to combine the nutty flavor with the wonderful flavor of corn so grits were added to the porridge along with oats and  oat bran.  For the main flour I used corn flour with KAF French style flour and freshly milled spelt and whole wheat flours as well.

I was very pleased with the nutty flavor of this one.  The crumb was super moist and I really enjoyed eating slices of this with mashed avocado for breakfast and grilled with some olive oil and freshly grated cheese for an accompaniment with grilled chicken.

The Echinacea are starting to bloom. We planted another 5-6 new varieties this year which are hopefully going to be stunning.

Levain Directions

Mix all the levain ingredients together  for about 1 minute and cover with plastic wrap.  Let it sit at room temperature for around 7-8 hours or until the starter has doubled.  I used my proofer set at 83 degrees and it took about 4 hours.  You can use it immediately in the final dough or let it sit in your refrigerator overnight.

Porridge Directions

Add about 3/4’s of the milk called for in the porridge to the dry ingredients in a small pot set to low and stir constantly until all the milk is absorbed.  Add the remainder of the milk and keep stirring until you have a nice creamy and soft porridge.    Remove from the heat and let it come to room temperature before adding to the dough.  I put mine in the refrigerator and let it cool quicker.

 Main Dough Procedure

Mix the flours, and the water for about 1 minute.  Let the rough dough sit for about 20 minutes to an hour.  Next add the levain, cooled porridge, and salt and mix on low for 5 minutes. Remove the dough from your bowl and place it in a lightly oiled bowl or work surface and do several stretch and folds.  Let it rest covered for 10-15 minutes and then do another stretch and fold.  Let it rest another 10-15 minutes and do one additional stretch and fold.  After a total of 2 hours place your covered bowl in the refrigerator and let it rest for 12 to 24 hours.  (Since I used my proofer I only let the dough sit out for 1.5 hours before refrigerating).

When you are ready to bake remove the bowl from the refrigerator and let it set out at room temperature still covered for 1.5 to 2 hours.  Remove the dough and shape as desired.

The dough will take 1.5 to 2 hours depending on your room temperature and will only rise about 1/3 it’s size at most.  Let the dough dictate when it is read to bake not the clock.

Around 45 minutes before ready to bake, pre-heat your oven to 550 degrees F. and prepare it for steam.  I have a heavy-duty baking pan on the bottom rack of my oven with 1 baking stone on above the pan and one on the top shelf.  I pour 1 cup of boiling water in the pan right after I place the dough in the oven.

Right before you are ready to put them in the oven, score as desired and then add 1 cup of boiling water to your steam pan or follow your own steam procedure.

After 5 minute lower the temperature to 450 degrees.  Bake for 35-50 minutes until the crust is nice and brown and the internal temperature of the bread is 205 degrees.

Take the bread out of the oven when done and let it cool on a bakers rack before for at least 2 hours before eating.

 

Halloween Kamut-Spelt Potato Bread with Onions

dsc_0044       dsc_0079    I wanted to bake a nice soft and flavorful bread but one with some healthy grains as well.  In went a soaker left for 24 hours in hot water comprised of grits, rolled oats and barley flakes.  I also added some left-over mashed potatoes and some grilled onions.

The flour was mostly fresh milled Kamut and Spelt with some KAF Bread Flour as well.

I used a cat and pumpkin cookie cutter to add some Halloween spirits to the boule, and while it could have used some seeds or cocoa to really make it cool, it still came out respectable.

The crumb was moist and open and bursting with flavor.  The soaker added a nice nutty flavor and the onions were melt in your mouth delicious along with the odd chunk of potato.  This one is worth making again.

Soaker Directions

Mix all of the dry ingredients together and add the boiling hot water.  Cover and let sit overnight or up to 24 hours at room temperature.

Levain Directions

Mix all the Levain ingredients together for about 1 minute and cover with plastic wrap.  Let it sit at room temperature for around 7-8 hours or until the starter has doubled.  I usually do this the night before.  Use immediately or refrigerate for up to 2 days.

 Main Dough Procedure

Mix the flours,  and 400 grams of the water together in your mixer or by hand until it just starts to come together, maybe about 1 minute.  Let it rest in your work bowl covered for 60 minutes.   Next add the salt, starter (cut into about 7-8 pieces), potatoes, onions and balance of the water, and mix on low for 6 minutes.  Remove the dough from your bowl and place it in a lightly oiled bowl or work surface and do several stretch and folds.  Let it rest covered for 10-15 minutes and then do another stretch and fold.  Let it rest another 10-15 minutes and do one additional stretch and fold.  After a total of 2 hours place your covered bowl in the refrigerator and let it rest for 12 to 24 hours.  (If you have a proofer you can set it to 80 degrees and follow above steps but you should be finished in 1 hour to 1.5 hours).

When you are ready to bake remove the bowl from the refrigerator and let it set out at room temperature still covered for 1.5 to 2 hours.  Remove the dough and shape as desired.   Place your dough into your proofing basket(s) and cover with a moist tea towel or plastic wrap sprayed with cooking spray.  The dough will take 1.5 to 2 hours depending on your room temperature.  Let the dough dictate when it is read to bake not the clock.

Porridge & Grits Bread

MainThis is the most sour porridge bread I’ve made to date.  I think the 2 day rest in the fridge for the Einkorn and European Style flour starter may have contributed to it.

I used some pearled barley and Organic Six Grain Flakes from KAF for the porridge and added some cooked grits with cheddar cheese.  I didn’t measure the cheese added to the grits but it wasn’t a large amount.  Feel free to indulge.  I always make a lot more grits than needed and eat them with dinner or breakfast later on.

Note: Grits are 80% water and the water added for the final mix takes the 120 grams of water left over after cooking for the grits into consideration.  I was actually going to add more water to the final dough but it didn’t need it.

The final bread was excellent with a nice moist and open crumb which is expected from porridge breads.  As I said before this one did come out a lot more sour than usual but it makes excellent grilled bread and toast and I almost wish I had kept both loaves instead of giving one away :).

Kiss My Grits Ricotta Cheese Bread

Final   For those of you old enough to remember Mel’s Diner, this bread pays homage to Flo who was happy to tell you to “Kiss My Grits” as she deemed necessary.Flo

I had bought some home made Ricotta from Fairway Market the other day to use for pizza and wanted to use the balance in a bread.  They just opened up a new Fairway Market closer to where we live and we went shopping over the weekend.  I picked up some Grits which is similar to Polenta but is white corn instead of yellow.  Grits by themselves are pretty bland unless you add some cheese and butter.  For this recipe I left out the cheese since I was adding Ricotta to the main dough but added a couple of tablespoons to the grits.

I ended up making way too much grits for the bread so I warmed it up on my barbeque and added some cheese and ate it as a side with dinner last night.  I was going to grill it but I didn’t cook it long enough for it to thicken up enough.

I used my trusty AP starter and added some freshly ground whole wheat flour and some Bob’s Red Mill Semolina along with KAF Bread flour.  I did not calculate the water used in the grits into the overall hydration but it definitely affected the final dough which was a little wet but more than manageable after a couple of stretch and folds.

The final bread ended up perfect with a nice dark crisp crust and moist light crumb.  The crumb is not too open but is perfect for sandwiches and grilled bread with some fresh mozzarella and tomatoes from my garden.

If you get a chance you should definitely try this one.  Max and Lexi guarantee you won’t be disappointed!

Grits Directions

Boil water in heavy duty pot and add grits and simmer for 5 minutes until soft and thick.  Cool completely before using.

(Note: you want to mix 1 part grits to 3 parts water.  I made a lot of extra grits but you can try and make the exact amount if desired)
