Porridge Maple Rye Rice Bread

  If you have been following my blog posts you know by now that I love a good porridge bread.  This one is no exception.

The addition of the coffee flavored maple syrup to the porridge and main dough added a nice slightly sweet undertone.  You don’t really taste the coffee but overall combined with the rice this one is a keeper.

The crumb came out perfect; moist, soft and open.  This is one that is good enough to eat by itself.  I finished off the whole loaf using it for sandwiches and gave one away to a few of my dog park friends.

Levain Directions

Mix all the levain ingredients together  for about 1 minute and cover with plastic wrap.  Let it sit at room temperature for around 7-8 hours or until the starter has doubled.  I used my proofer set at 83 degrees and it took about 4 hours.   You can use it immediately in the final dough or let it sit in your refrigerator overnight.

Porridge Directions

Add about 3/4’s of the milk called for in the porridge to the dry ingredients in a small pot set to low and stir constantly until all the milk is absorbed.  Add the remainder of the milk and keep stirring until you have a nice creamy and soft porridge.  Remove from the heat and let it come to room temperature before adding to the dough.  I put mine in the refrigerator and let it cool quicker.

 Main Dough Procedure

Mix the flours  and the water for about 1 minute.  Let the rough dough sit for about 20 minutes to an hour.  Next add the levain, cooled porridge, rice, maple syrup and salt and mix on low for 5 minutes.   Remove the dough from your bowl and place it in a lightly oiled bowl or work surface and do several stretch and folds.  Let it rest covered for 10-15 minutes and then do another stretch and fold.  Let it rest another 10-15 minutes and do one additional stretch and fold.  After a total of 2 hours place your covered bowl in the refrigerator and let it rest for 12 to 24 hours.  (Since I used my proofer I only let the dough sit out for 1.5 hours before refrigerating).

When you are ready to bake remove the bowl from the refrigerator and let it set out at room temperature still covered for 1.5 to 2 hours.  Remove the dough and shape as desired.

The dough will take 1.5 to 2 hours depending on your room temperature and will only rise about 1/3 it’s size at most.  Let the dough dictate when it is read to bake not the clock.

Around 45 minutes before ready to bake, pre-heat your oven to 550 degrees F. and prepare it for steam.  I have a heavy-duty baking pan on the bottom rack of my oven with 1 baking stone on above the pan and one on the top shelf.  I pour 1 cup of boiling water in the pan right after I place the dough in the oven.

Right before you are ready to put them in the oven, score as desired and then add 1 cup of boiling water to your steam pan or follow your own steam procedure.

After 5 minute lower the temperature to 450 degrees.  Bake for 35-50 minutes until the crust is nice and brown and the internal temperature of the bread is 205 degrees.

Take the bread out of the oven when done and let it cool on a bakers rack before for at least 2 hours before eating.

Cream Cheese Sourdough Buns

This is a version of my go to hamburger/hot dog bun/rolls formula.  Last time I made this with fresh milled rye so this time I used fresh milled whole wheat instead.

As usual they didn’t disappoint.  I made these around 160 grams so these will fit the biggest burger you dare to use.  They are nice and soft and flavorful and perfect for burgers, sandwiches or just with some eggs and cheese for breakfast.

Levain Directions

Mix all the levain ingredients together for about 1 minute and cover with plastic wrap.  Let it sit at room temperature for around 7-8 hours or until the starter has doubled.  I usually do this the night before.

Either use in the main dough immediately or refrigerate for up to 1 day before using.

 Main Dough Procedure

Mix the flours,  and water together in your mixer or by hand until it just starts to come together, maybe about 1 minute.  Let it rest in your work bowl covered for at least one hour.  Next, add the salt, starter (cut into about 7-8 pieces), cream cheese, softened butter and mix on low for 5 minutes.    Remove the dough from your bowl and place it in a lightly oiled bowl or work surface and do several stretch and folds.  Let it rest covered for 10-15 minutes and then do another stretch and fold.  Let it rest another 10-15 minutes and do one additional stretch and fold.  After a total of 2 hours place your covered bowl in the refrigerator and let it rest for 12 to 24 hours.

When you are ready to bake remove the bowl from the refrigerator and let it set out at room temperature still covered for 1 hour.  Remove the dough and shape into rolls around 160 grams each.  Cover the rolls with a moist tea towel or plastic wrap Sprayed with cooking spray and let rise at room temperature for 1 1/2 – 2 hours.  If you want seeds, brush with an egg wash and sprinkle on your toppings.  I used poppy seeds and smoked sesame seeds.

Around 45 minutes before ready to bake, pre-heat your oven to 500 degrees F. and prepare it for steam.  I have a heavy-duty baking pan on the bottom rack of my oven with 1 baking stone on above the pan and one on the top shelf.  I pour 1 cup of boiling water in the pan right after I place the dough in the oven.

After you place the rolls in the oven and add your steam lower the temperature to 445 F.   Bake for 25 minutes or until the rolls are nice and brown.

Take the rolls out of the oven when done and let them cool on a bakers rack for as long as you can resist.

 

 

 

Rye Onion Porridge YW SD Combo

Onions and rye go together like hot fudge and ice cream.  I haven’t made a good rye bread in a while so today’s bake was all about creating a flavorful onion rye with a moist open crumb.  I wanted to use my new Yeast Water in this bake but didn’t want to only rely on it to leaven the bread so I mixed up a simple AP starter with some spelt bran and added the YW as part of the liquid in the main dough.

The porridge was a combo of rolled oats and rye chops (chopped rye berries) and milk to add some extra creaminess.

I milled the rye flour using my MockMill 200 and sifted out the germ and bran.  I tried something different this time and added about 55 grams of the germ/bran to some of the water from the main dough and let it soften at the same time as the main dough flours were autolysing with the YW and water.  Usually I add it to the main dough after mixing for about 5 minutes.  I’m not sure if this really made a difference, but the combination of the YW and high hydration really gave me a moist and open crumb which tastes amazing (if I do say so myself !).

Caramelized Onions

Cut onion into thin rings and cook on low heat in a saute pan with some olive oil for around 30-45 minutes until the onions are nice and brown and full of sweetness.  I added a little balsamic vinegar at the end to make them even sweeter.

Mix the flours  and the water for about 1 minute.  Let the rough dough sit for about an hour.  Next add the levain, cooled porridge, Yeast Water and salt and mix on low for 5 minutes.  Now add the caramelized onions and mix on low for another minute until they are incorporated.    Remove the dough from your bowl and place it in a lightly oiled bowl or work surface and do several stretch and folds.  Let it rest covered for 10-15 minutes and then do another stretch and fold.  Let it rest another 10-15 minutes and do one additional stretch and fold.  After a total of 2 hours place your covered bowl in the refrigerator and let it rest for 12 to 24 hours.  (Since I used my proofer I only let the dough sit out for 1.5 hours before refrigerating).

When you are ready to bake remove the bowl from the refrigerator and let it set out at room temperature still covered for 1 hour.  Remove the dough and shape as desired.

Rye Potato Onion Porridge Ale Bread and Holiday Rolls

         Happy Holidays to everyone.  As usual, we celebrated the holidays with family and friends and cooked and baked and baked some more :).

For Christmas dinner at our good friends house I always bring my homemade pirogi filled with potatoes and cheese and also a cheese only version.  I also bring some type of rye bread to accompany the spiral ham they serve.  This year I made a big miche style rye with porridge, raspberry ale, onions, mashed potatoes mixed with fresh ground rye, white rye and First Clear flour.

I made a smaller loaf to keep for myself and as you can by the crumb shot it came out nice and moist and full of rye and onion flavor.

I made some German pretzel rolls to bring to my family’s holiday dinner.  I melted some smoked Gruyere on some of them which was delicious.

For Christmas Eve I made some German Weizenbrotchen Sour dough Rolls brushed with melted garlic butter to go along with the Italian theme our friends were following.  I also melted some mixed Italian cheeses on some of them for something extra special.

Cherry Cranberry Pecan Porridge Cream Cheese Rolls

These rolls were baked for Thanksgiving dinner at my Brother in law’s in North Carolina.  We made our usual pilgrimage down south and as usual I volunteered to make some rolls for dinner.

I actually made 2 batches from the same main dough.  One batch had the cherries, cranberries and pecans and the other was plain with some melted cheddar grated on top and toasted dried onions.  The formula below includes only enough cherries, cranberries and pecans for half the dough so if you want to use it for the entire batch, simply double the amount.

These came out nice and soft and super tasty and went over very well with the hungry family.

Add the dried cherries and cranberries to the water and let it hydrate for about 30 minutes.  Strain the add-ins and set aside and use water for main dough.  Mix the flours, and the water for about 1 minute.  Let the rough dough sit for about 20 minutes to an hour.  Next add the levain, cooled porridge, cream cheese and salt and mix on low for 5 minutes.  Add the pecans, cherries and cranberries and mix until incorporated or you can add it by hand during the stretch and folds.  Remove the dough from your bowl and place it in a lightly oiled bowl or work surface and do several stretch and folds.  Let it rest covered for 10-15 minutes and then do another stretch and fold.  Let it rest another 10-15 minutes and do one additional stretch and fold.  After a total of 2 hours place your covered bowl in the refrigerator and let it rest for 12 to 24 hours.

When you are ready to bake remove the bowl from the refrigerator and divide into pieces approximately 110-130 grams depending on how big you want them.  Shape into rolls and place on parchment lined cookie sheets or jelly pans.  Cover with a damp tea towel or plastic wrap sprayed with oil and let them rise until they are 1/3 to doubled in size.

Around 45 minutes before ready to bake, pre-heat your oven to 450 degrees F. and prepare it for steam.  I have a heavy-duty baking pan on the bottom rack of my oven with 1 baking stone on above the pan and one on the top shelf.  I pour 1 cup of boiling water in the pan right after I place the dough in the oven.

Right before you are ready to put them in the oven, apply a simple egg wash and for the batch with the cheese and onions add after applying the egg wash.  Next add 1 cup of boiling water to your steam pan or follow your own steam procedure.

Lower the temperature to 425 degrees.  Bake for 25-30 minutes until the rolls are nice and brown.

Take the bread out of the oven when done and let it cool on a bakers rack before for at least 1 hour before eating.

 

 

 

Sourdough Bialys with Whole Wheat

      This is a new version of a recipe I made a while ago.  I replaced around 30% of the high gluten flour with fresh milled and sifted whole wheat flour and used First Clear flour instead of High Gluten flour.  I added some cheese on top of some of them just to make it interesting.  I also added some extra water which the thirsty whole wheat gobbled up.

For the water in the main dough I used ice water.

I was very happy how this one turned out.  They tasted fantastic with an extra flavor boost from the whole wheat flour.  My favorite way to eat these is with a schmeer of whipped cream cheese and toasted.

I also made a potato pizza a few weeks ago which came out great.  I sliced some Yukon gold potatoes real thin and let them seep in hot water to soften a bit.  I added some white cheddar and smoked Gruyere along with some caramelized onions as well.  Very tasty!

Levain Directions

Step 1

Mix all the levain ingredients together  for about 1 minute and cover with plastic wrap.  Let it sit at room temperature for around 7-8 hours or until the starter has doubled.  I used my proofer set at 83 degrees and it took about 4 hours.

Onion Poppy Seed Filling

45 grams Dehydrated Onions

340 grams Boiling Water

14 grams Vegetable Oil

10 grams Black Poppy Seeds

4 grams (1/4 tsp.) Sea Salt

Add the boiling water to the onions and stir and let them sit for around 30 minutes or longer.  Next strain them out and spread them on a piece of paper towel.  Wring out as much water as you can.

Mix the onions with the remaining ingredients and refrigerate until ready to use.

 Main Dough Procedure

Mix the flours with the ice water for about 1 minute.  Let the rough dough sit for about 20 minutes to an hour.  Next add the starter and  salt and mix on low for 5 minutes and speed #2 for another 3 minutes.   You should end up with a cohesive dough that is slightly tacky but very manageable.  Remove the dough from your bowl and place it in a lightly oiled bowl or work surface and do several stretch and folds.  Let it rest covered for 10-15 minutes and then do another stretch and fold.  Let it rest another 10-15 minutes and do one additional stretch and fold.  Let the dough rise until it is doubled in size.  I used my proofer and it took around 5 hours.  (Note: I did not make a fresh starter but used part of my mother starter I had refreshed a few days before which is why it probably took so long.)

When the dough is ready, divide into 12 pieces that are 85 grams each and shape them into round rolls shapes.  Let them rest on a parchment covered baking sheet and cover with sprayed plastic wrap or a moist lint free towel(s).  Let the shaped dough proof until they are doubled in size and the poke test leaves a nice indent.  You almost want them to over-proof otherwise they will puff up too much which you don’t want.

Around 45 minutes before ready to bake, pre-heat your oven to 500 degrees F. and prepare it for steam.  I have a heavy-duty baking pan on the bottom rack of my oven with 1 baking stone on above the pan and one on the top shelf.  I pour 1 cup of boiling water in the pan right after I place the dough in the oven.

Once they are proofed sufficiently take each ball in your hand and place your two thumbs in the middle and stretch the dough so the center is paper thin and the outside has a nice thick rim.  It’s almost like making a mini pizza.

Next, place a teaspoon of the onion filling in the middle of each shaped bialy and place in your oven.   Place the cup of boiling water into the oven and bake for 15-20 minutes until the bialys are nice and brown.

Ricotta Rye with Corn Flour Sourdough

I haven’t made a rye bread in a while and I wanted to a nice moist one that would be good for sandwiches.  The addition of the ricotta cheese and mashed potatoes made for a super moist crumb and the corn flour added a very interesting flavor profile.

I was very happy with the flavor on this one and love the moist crumb.  The onions always go well with rye of course.

I did two siftings of the freshly ground rye which was ground using my MockMill attachment for the KitchenAid mixer which really made for a light crumb coming in at over 52% rye.  All in all this one is a keeper and worth trying.
