Sprouted Wheat-Durum Buttermilk Onion Rolls

Closeup This is my first bake after returning from a nice 10 day excursion to China and Taiwan for business.  My starter is not in a good mood right now so instant yeast was in order.

I decided to use some of the freshly sprouted whole wheat and durum flour that I had prepared before I left for my trip.  I used 81% sprouted flour in this bake along with a little bread flour to give it a little strength.

Onions, butter, buttermilk and cheese took these rolls over the top and the final product is easily one of my favorites to date.  If you are up to sprouting some flour please give these a try and you won’t regret it.

 Main Dough Procedure

Mix the flours, yeast, and salt together.  Add the dehydrated onions to the buttermilk and let it sit for a few minutes to re-hydrate them.  Next add the buttermilk-onion liquid and maple syrup to the flour and mix on speed #2 for 5 minutes.  Add the cheese with the main dough and mix on low for 1 minute until it is thoroughly mixed.  Place the dough into a well oiled container and let it sit overnight in the refrigerator or let it rise at room temperature until it is doubled in size.

The next day, let the dough sit out at room temperature for 45 minutes to an hour.  Next, divide into rolls around 145 grams each and cover with a moist tea towel or spray some plastic wrap with cooking spray and cover.  Since the cookie sheet I used was too big to put in my proofer I put a cup of hot water in a pan in my oven and let them rise for around an hour until almost doubled in size.  If you like you can use an egg wash or as I did in this case, brushed some olive oil on each roll and sprinkle seeds of your choice.  I used smoked sesame seeds, and white poppy seeds

Around 45 minutes before ready to bake, pre-heat your oven to 500 degrees F. and prepare it for steam.  I have a heavy-duty baking pan on the bottom rack of my oven with 1 baking stone on above the pan and one on the top shelf.  I pour 1 cup of boiling water in the pan right after I place the dough in the oven.

Place your rolls in the oven and lower the oven to 450 degrees and bake for 25-35 minutes until the rolls are nice and brown.

Take the rolls out of the oven when done and let it cool on a bakers rack before for at least 1 hour before eating.

Turkey Meatball Balsamic Calzone

MainThe other night for dinner I decided to use the left-over pizza dough I made last week and make some calzones.  The pizza dough is similar to my normal one using mostly type 00 Caputo flour mixed with about 10% whole wheat.  I ran out of Caputo so I actually used around 20% Caputo along with some AP flour, potato flour and whole wheat and I added some Asiago cheese just for the fun of it.

The dough actually made some great pizza and was still nice and extensible after sitting in the freezer for a week.

I made some turkey meatballs using ground turkey, Panko Chili bread crumbs, greek yogurt, dried oregano, onions, fresh chopped garlic, onion powder, garlic powder, Worcestershire sauce, and a couple of eggs.  I browned them on all sides in a large pan and covered them for a few minutes at the end to make sure they were cooked through.  Lastly I glazed them with some good balsamic vinegar and let it create a nice caramelized crust on the meatballs.

For the stuffing in the calzones I used the meatballs, fresh ricotta cheese, fresh mozzarella and a little Asiago.

The end result was a whole lot of cheesy goodness!

French Style Asiago Caramelized Onions Porridge Bread

MainFinalIf you haven’t figured it out by now that I kind of love this whole porridge bread thing than now you finally know :).

I just finished off my last Durum Semolina with Ricotta Porridge bread and wanted to change things up a bit and add more whole grains.  This one has plenty of whole grain goodness added to the KAF French style flour including fresh rye flour, fresh spelt flour and fresh whole wheat flour along with a nice mixed grain porridge.

I wanted to caramelize some onions for pizza night so I used the left-overs in this concoction along with a healthy dose of shredded Asiago cheese.

The starter was made with my standard trusty AP stiff seed starter along with some French Style flour in 1 build this time since my mother starter was just refreshed.

I made one large Miche which ended up coming out as tasty as it gets.  A nice moist open crumb with the combination of mixed grains, cheese and onions really just make this a wonderful bread.  I highly recommend this one, but beware it is a bit sticky so you need to be used to handling wet doughs.

Levain Directions Build 1 (Using AP Starter at 66% Hydration for Seed)

Mix all the levain ingredients together  for about 1 minute and cover with plastic wrap.  Let it sit at room temperature for around 7-8 hours or until the starter has doubled.  I used my Proofer set at 81 degrees and it took about 4 hours.

 

Oat Porridge Directions

Add about 3/4’s of the milk called for in the porridge to the dry ingredients in a small pot set to low and stir constantly until all the milk is absorbed.  Add the remainder of the milk and keep stirring until you have a nice creamy and soft porridge.  Remove from the heat and let it come to room temperature before adding to the dough.  I put mine in the refrigerator and let it cool quicker.

 

 Main Dough Procedure

Mix the flours , wheat germ  and the water for about 1 minute.  Let the rough dough sit for about 20 minutes to an hour.  Next add the levain, cooled porridge and salt and mix on low for 5 minutes.  Next add the cheese and onions and mix for another minute.  Remove the dough from your bowl and place it in a lightly oiled bowl or work surface and do several stretch and folds.  Let it rest covered for 10-15 minutes and then do another stretch and fold.  Let it rest another 10-15 minutes and do one additional stretch and fold.  After a total of 2 hours place your covered bowl in the refrigerator and let it rest for 12 to 24 hours.  (Since I used my proofer I only let the dough sit out for 1.5 hours before refrigerating).  Note: this is a pretty wet dough so you may need to do a couple of additional stretch and folds.

When you are ready to bake remove the bowl from the refrigerator and let it set out at room temperature still covered for 1.5 to 2 hours.  Remove the dough and shape as desired.

The dough will take 1.5 to 2 hours depending on your room temperature and will only rise about 1/3 it’s size at most.  Let the dough dictate when it is read to bake not the clock.

Around 45 minutes before ready to bake, pre-heat your oven to 550 degrees F. and prepare it for steam.  I have a heavy-duty baking pan on the bottom rack of my oven with 1 baking stone on above the pan and one on the top shelf.  I pour 1 cup of boiling water in the pan right after I place the dough in the oven.

Right before you are ready to put them in the oven, score as desired and then add 1 cup of boiling water to your steam pan or follow your own steam procedure.

After 5 minute lower the temperature to 450 degrees.  Since I made a large Miche I needed to lower the temperature to 425 F for the last 15 minutes to prevent the crust from burning.  Bake for 35-50 minutes until the crust is nice and brown and the internal temperature of the bread is 205 degrees.

Take the bread out of the oven when done and let it cool on a bakers rack before for at least 2 hours before eating.

Asiago-Cheddar Cheese Egg Sourdough

Closeup1    This was going to be bread for my wife’s stuffing this weekend, but the impending snow storm has postponed our family dinner and the need for stuffing.  Not to mention she informed me she wanted a simple white bread and challah bread anyway, so I will be happy to eat this tasty cheesy, eggy bread all by myself.  No complaints here as this turned out excellent.  This bread tastes like cheese since I mixed both cheddar and Asiago cheese into the dough before it went for its overnight slumber in the fridge.  I think this method really distributes the cheese flavor throughout the entire bread.

I have to say the crust came out nice and chewy and the crumb was open and soft.  This bread is a keeper and is good enough to eat without any additional toppings.

I used my standard trusty AP starter at 65% hydration refreshed per below.

AP Starter

227 grams AP Flour

71 grams AP Seed Starter

151 grams Water at Room Temperature (80-90 degrees F.)

Mix ingredients in a bowl until thoroughly combined.  Cover the bowl and let it sit at room temperature for around 8 hours.  The starter should almost double when ready to proceed.  You can either mix in final dough or put in refrigerator for at most 1 day before using.

Main Dough Ingredients

425 grams AP Starter from above

130 grams First Clear Flour

290 grams European Style Flour (KAF–you can substitute AP or Bread Flour)

100 grams Durum Flour

25 grams Potato Flour

80 grams Grated Cheddar Cheese

40 grams Grated Asiago Cheese

142 grams Whole Egg Beaten (3 large eggs)

262 grams Water at Room Temperature

15  grams Olive Oil

18 grams Seas Salt or Table Salt

Directions

Mix the flours, oil, water (hold back 50 grams for later) and eggs in your mixer or by hand for 1 minute. Let it rest covered in your bowl for 10 minutes.   Next cut the starter into small pieces and put into the bowl on top of the dough and let it rest another 10 minutes covered.  After the autolyse is complete add the salt and the rest of the water as needed and mix for 3 minutes on low to incorporate all the ingredients.  The dough should form a sticky ball at the end of 3 minutes mixing.  Now add the cheese and mix for 1 additional minute to incorporate all of the cheese throughout the dough.  the dough will be rather sticky but resist the urge to add more flour.

Next take the dough out of the bowl and place it a well oiled bowl.  Do several stretch and folds in the bowl and rest the dough uncovered for 10 minutes.  After the rest do several more stretch and folds in the bowl and cover the bowl and let it rest for 10 minutes.  Do one more stretch and fold and let it sit at room temperature covered for 2 hours.  Feel free to do some additional S&F”s to build up more gluten strength.  After 2 hours you can put the dough into the refrigerator for 24 hours or up to 2 days before baking.  I baked the bread about 14 hours later.

The next day (or when ready to bake) let the dough sit out at room temperature for 1.5 – 2  hours.

Next, form the dough into your desired shape and put it in a floured basket  or bowl and let it rise covered for 1.5 to 2 hours or until it passes the poke test.

Score the loaves as desired and prepare your oven for baking with steam.

Set your oven for 500 degrees F. at least 30 minutes before ready to bake.  When ready to bake place the loaves into your on  your oven stone with steam and lower the temperature immediately to 450 degrees.    When the loaf is golden brown and reached an internal temperature of 205 degrees F. you can remove it from the oven.

Let it cool on a wire rack for at least 2 hours before digging in if you can wait that long.
